Freeze-drying, also known as lyophilization, is a complex but effective process used to make freeze-dried products.

  • Preparation of Raw Materials:

  •  Loading into Freeze-Drying Chamber:

  • Primary Drying (Sublimation):

The vacuum chamber is sealed, and the pressure inside is reduced. Heat is applied to the food, causing the ice within it to change directly from a solid (ice) to a gas (water vapor) through a process called sublimation. This is the primary drying phase and removes most of the moisture.

  • Secondary Drying (Desorption):

After the primary drying, the product undergoes a secondary drying phase. In this step, the temperature and pressure conditions are adjusted to remove any remaining moisture. This is crucial for preventing reabsorption of moisture when the food is exposed to air.

  • Packaging:

Once the freeze-drying process is complete, the food is removed from the freeze-drying chamber and immediately sealed in airtight packaging. This packaging is designed to protect the product from moisture and external contaminants.

  • Quality Control:

The final freeze-dried product undergoes quality control checks to ensure that it meets the desired standards for taste, texture, and nutritional content. Any products that do not meet these criteria are rejected.
